Something about these bars are very springtime-Judaism to me. The edges taste like Hamantashen–crumbly dough with a jammy, seed-studded filling. The combination orange zest and figs reminds me of Tu B’Shevat in a 1970s sunshine kind of way.
I used Earth Balance instead of oil and reduced the amount of sugar by 1/4 a cup. I wish I would have left out the agave nectar–the figs I had were sweet enough without it. My figs didn’t boil down into a paste, but there are worse things you can find in a cookie than a quartered dried fig.
